Whole Roasted Sea Bass

Tonight we tried a new recipe that has us salivating at just the thought of it….
Whole Roasted Sea Bass.

First off we made a trip to the local Asian Supermarket (T&T) where they have lots of fresh fish to choose from.

You can also goto the nearest farmers market or fish market…
We bought 2 for approx.  $17 dollars and the clerks were nice enough to de-scale and gut the fish for us. If you must do it yourself, I recommend YouTube for how-to’s…

Next, we seasoned and marinated our fish…
Season with lots of salt and pepper inside and outside.

Cut slits on the tops and stuff with thin lemon slices

Then on the inside, stuff with fresh basil and lemon slices (don’t forget to add lots of salt and pepper

Next drizzle those bad boys with tons of Olive oil inside and out

And let them sit to marinate while you make your side dishes (today it’s scalloped potatoes and steamed   broccoli).

Bake for 30 Mins or so, or until it’s as crispy as you like at 375° F. If you have another side like potatoes in the oven as well, you can leave it for 45 minutes or so.  Broil for 3-5 Mins at the end for extra crispiness.

And…….
VOILA

Baked Sea Bass with scalloped potatoes and steamed broccoli! It’s smooth and it tastes like butter… Pair with your favourite Pinot Grigio. It’s also a great dinner party idea because it’s easy and a show stopper!
